Baked Brownie Alaska

We've switched up the classic retro Baked Alaska recipe by adding our Chocolate Brownie Mix to make it even more of a showstopper. Why not give it a try, perfect for a special occasion or a Sunday afternoon treat.
Recipe ingredients
- 500g pack Ta-Da! Chocolate Brownie Mix
- 140ml water
- 60g plain chocolate, melted
- 200g caster sugar
- 350g raspberry ripple ice cream
- 4 medium egg whites
Equipment
- 21cm round tin
- Mixing bowl
- Whisk
- Preheated oven to 220°C, gas mark 7
Step 1
Preheat the oven to 180°C gas mark 4. Grease and line a 21cm round tin.
Step 2
Place the brownie mix in a bowl. Stir in 140ml water and the melted chocolate and mix for 1-2 minutes.
Step 3
Spoon into the prepared tin and bake for 35 minutes, allow to cool before removing from the tin and cool completely before placing in the freezer for 30 minutes.
Step 4
Whisk the egg whites to soft peaks and gradually whisk in the sugar until thick and glossy.
Step 5
Place the whole brownie on a baking tray lined with parchment, spoon the ice cream in a mound leaving a 2cm border round the edges.
Step 6
Top with the meringue making sure the ice cream and the edges of the brownie are all completely covered. Place in the freezer for 1-2 hours or overnight.
Step 7
Preheat the oven to 220°C, gas mark 7. Place the Alaska in the oven for 8-10 minutes until golden. Serve immediately.
