Millionaire’s Caramel Cupcakes

Millionaire's Caramel isn't just for shortbread, why not try this tasty cupcake recipe topped with Millionaires buttercream icing.
Recipe ingredients
- 400g Ta-Da! Vanilla Cake Mix
- 200ml water
- 100ml Vegetable oil
- 1½ x 370g Ta-Da! Millionaire's Caramel (555g)
- 75 Baking margarine/butter
Equipment
- 1 Large mixing bowl
- Measuring jug
- 12 muffin tin and cases
- Preheated oven to 180°C, gas mark 4
- Piping bag with star tube
Step 1
Preheat the oven to 180°C, gas mark 4. Line a 12 hole muffin tin with 12 muffin cases.
Step 2
Place the cake mix in a large bowl with the water, oil and 70g of the millionaires caramel to form a smooth batter. Divide the mix between the muffin cases and bake for 25 minutes and allow to cool.
Step 3
Whilst the cupcakes are cooling, place 1 tub of the millionaires caramel and the margarine or butter into a bowl, using a large spoon, beat until a smooth cream is formed.
Step 4
Using a piping bag fitted with a star nozzle, pipe a 35g swirl of the caramel cream onto the middle of each cupcake.
Step 5
Gently warm the remaining millionaires caramel in a microwave and transfer it into a disposable piping bag. Using scissors carefully snip a small hole in the caramel filled piping bag. Drizzle over the top of the iced cupcakes to finish.
