You may have had carrot cake before, but have you ever tried a Lemon Filled Carrot Cake? Surprise your guests with this deliciously moist, lemony twist on a classic, with our Vanilla Cake Mix and Ta-Da! Lemon Creamy Filling.
Recipe ingredients
- 500g pack Ta-Da! Vanilla Cake Mix
- 240ml water
- 135ml vegetable oil
- 1 large carrot, grated
- 150ml double cream
- 75g cream cheese
- 200g Ta-Da! Lemon Creamy Filling
Equipment
- 1 Large mixing bowl
- Measuring jug
- 2 x 20cm round sandwich tins
- Preheated oven to 180°C, gas mark 4
- Whisk
Step 1
Preheat the oven to 180°C, gas mark 4.
Step 2
Grease and base line 2 x 20cm round sandwich tins.
Step 3
Place the cake mix in a large bowl and mix in 240ml water and the oil to form a smooth batter, stir the grated carrot and divide evenly between the 2 prepared tins.
Step 4
Bake for 20-25 minutes.
Step 5
Allow to cool slightly before removing from the tins then cool completely.
Step 6
Whisk the cream, cream cheese and 100g creamy lemon filling to soft peaks.
Step 7
Place 1 cake on a platter and spread over the cream mixture.
Step 8
Top with the other cake and spread the top with the remaining creamy lemon filling to serve.
